Meat Loaded Potatoes

Ingredients

  • 1 can ANEW Plant-Based Luncheon Meat (Black Pepper), cubed
  • 3 potatoes, sliced into half lengthwise
  • 100 g mozzarella cheese, shredded
  • 1/2 cup of Greek yogurt
  • 1/2 tbsp salt
  • 1/2 tbsp ground black pepper
  • 2 tsp green onion, chopped
  • 5 tbsp unsalted butter
  •  

Steps

  1. Place the potato halves in a steamer, facing up, and steam 20 minutes till soft.
  2. Cut ANEW Plant-Based Luncheon Meat (Black Pepper) into cubes.
  3. Using a pan and on medium high heat, melt the unsalted butter and stir fry the meat cubes until golden brown. Set aside to cool slightly.
  4. In a mixing bowl, add together the cubes, greek yogurt, shredded mozzarella, salt, black pepper, and chopped green onions. Mix evenly.
  5. Plate the steamed potatoes. Place mixture on top.
  6. Ready to serve!
